Glorias Delicious Ceviche

I love when my mom makes ceviche, it is the perfect summer food! Although, I really could eat it all year long. It’s simple, fast and you probably already have most ingredients in the fridge.


Ingredients:


Large cooked, peeled, deveined shrimp (if tail on-be rue to remove beforehand)

Lemons

Limes

Large Orange

Onion

Tomatoes

Cilantro

2 tbsp Soy Sauce

Salt

Pepper


In a chopper or by hand, chop the shrimp in tiny pieces. This is the chopper I recommend.

Put the chopped shrimp in a separate bowl, then chop one onion,cilantro and add to bowl of shrimp.


Chop tomatoes, we used about 7 small tomatoes. Add to the bowl. Squeeze in the juice of the orange, being careful to remove any seeds. 2 tbsp soy sauce. Squeeze in 2 lemons, 3 limes, this is to taste.


Season with salt & pepper. Give it a good mix and do a taste test, you may need to add more salt or lemon/lime juice. This is all going to depend on your personal taste.


Once you have it tasting the way you like, cover with Saran Wrap and let it sit in the fridge for 45 min or longer to let it marinate


Best served cool with tortilla chips or on a tostada!
